In this easy menu perfect for Passover, we start with gently braised artichokes, which are usually plentiful in the farmers’ market around this time of year. The traditional beef brisket is prepared in a slow cooker for hours along with red wine and shallots to make sure it turns out tender and flavorful. While the beef cooks, you can whip up a kugel—here, one made with potatoes instead of noodles, so that it resembles a potato latke in flavor, but without the fuss of frying them.
