When April Bloomfield moved to the U.S. from London, she opened a gastropub in New York called The Spotted Pig. Years later she wrote her very first cookbook, titled A Girl & Her Pig, which focused on a nose-to-tail approach to enjoying pork and more. So, it’s no surprise that her name became synonymous with deliciously meaty meals. “I think a lot of people know me as someone who loves everything porcine,” says Bloomfield. “The thing is, I actually really love vegetables.” Her new book, A Girl and Her Greens, focuses on her love affair with fresh vegetables. “I love cooking them, I love eating them, I love going to the market and shopping for them,” says Bloomfield. “I wanted to show that side of myself.”
