Gorgonzola
An exceptional cow's milk cheese from Italy with a moist, creamy texture and complex flavor. May be marketed as dolce or naturale, the former being milder and the latter, stronger tasting and more aromatic.

Maytag Blue
An acclaimed American cow's milk cheese with creamy texture and good, assertive flavor.

Roquefort
A sheep's milk cheese from France with a moist, crumbly interior and true, clean, strong flavor. Some Roqueforts are rather salty.

Stilton
