Profile: Charlotte's Confections

Located in a town just south of San Francisco, Charlotte’s Confections still relies on equipment from the 1930s, including classic copper kettles, traditional chocolate melters and a century-old nut roaster. The company's candymakers learn time-honored techniques from a master confectioner who has been making sweets since the age of eight, taught by his grandfather. Like most artisanal foods, Charlotte’s candies are hand made in small batches, using only the finest natural ingredients.

Created exclusively for Williams-Sonoma, Charlotte’s inimitable peppermint bark combines two well-loved holiday flavors: chocolate and peppermint. First, a layer of melted dark chocolate, flavored with a hint of peppermint oil, is carefully spread on a wide, flat surface. When the chocolate has hardened, a candymaker smooths a layer of melted white chocolate over the entire surface, then tops it with peppermint candy bits. The bark is then scored, broken into pieces and packed by hand in old-fashioned tins.

A holiday favorite, Charlotte's decadent rocky road descends from an old family recipe. It starts with fresh marshmallows made from a syrup that is simmered in copper kettles, then whipped to the perfect degree of fluffiness. After cooling, small pieces of the marshmallow are mixed with melted dark chocolate and freshly roasted walnuts, then poured into traditional molds. This confection is rich, flavorful and gloriously chunky, well deserving of its name.
