For our Lunar New Year menu, we took our lead from Gloria Tai, Williams Sonoma’s manager of food development, who grew up making dumplings alongside her mother and grandmother in anticipation of the holiday. She explains the significance of the main courses, whole roast chicken and whole steamed fish, saying, “The emphasis is on the word ‘whole,’ representing the completeness and wholeness of the family as they join together.” Uncut noodles and long beans are associated with long life, while dumplings resemble ingots, which represent wealth.
