The Italian Table

The traditional Italian meal is presented in a carefully orchestrated progression of courses, beginning with antipasti. Here, we start with bruschetta (grilled slices of bread) topped with white beans and olive oil, plus a platter filled with ripe melon, figs, salami and prosciutto. Il primo piatto, the first course, is typically a small portion of pasta, risotto or soup, such as our classic tomato and bread soup.

For the main course (il secondo piatto), we've chosen arista, a succulent roasted pork seasoned with rosemary, thyme and garlic. The vegetable side dish (contorni) features rapini sautéed with olive oil, garlic and red pepper flakes. Affogato—a sublimely simple dessert of vanilla gelato doused with a shot of espresso—ends the meal in the Italian style.
