Inspired by the Mediterranean tradition, our Easter menu features foods that symbolize the birth of a new season. The centerpiece of the feast is a roasted leg of lamb, a custom that dates back to the days when tender young lamb was available only during spring. Here, we season the meat with garlic, mint and oregano. Garden-fresh peas, artichokes, asparagus and new potatoes—favorite vegetables of springtime—all find a place on the menu. An Italian-style tart, rich with almonds, makes an impressive ending to the celebration.
