Summer entertaining doesn’t have to be limited to picnics and barbecues. Take advantage of the season’s bountiful fresh produce and leisurely pace with this easy, breezy brunch menu that delivers plenty of summer fun with a minimum of fuss. Start off with a pitcher of cooling blueberry lemonade made aromatic with plenty of fresh mint. For the main course, our decadent vanilla bean French toast can be assembled the night before serving, which means you can sleep in! Finish up with a pretty olive oil cake studded with a variety of summer fruit. The dessert comes together in about 15 minutes of hands-on time, and can also be made a day in advance, so you can enjoy the brunch just as much as your guests.
