Brittany Baldwin founded her home chef and catering business with the goal of bringing delicious, affordable farm-to-table cooking to Portland's "busy class." The concept was simple — use ingredients from her own garden to cook meals for clients — but the response has been overwhelmingly positive.
Baldwin graduated from Portland's Le Cordon Bleu Culinary Academy before launching Portland Home Chef in 2003. She provides family meals made from her own small farm, where she grows a variety of fruits and vegetables such as sweet peppers, beets and greens and raises chicken and quail for farm-fresh eggs.
Baldwin's meals consist of mixed herb salads, steamed salmon or chicken breasts stuffed with wild mushrooms, and homemade ice creams and cobblers — a far cry from pizza delivery.
