When Chef Ryan Pollnow set out to travel and eat his way through Spain, he expected to be inspired by the high-end, fine-dining scene. Instead, it was the casual, vibrant tapas bars filled with friends and small, delicious plates of food that made him want to return to San Francisco and open a spot with a similar style.
