Welcome Easter and the arrival of spring with this menu that puts a fresh twist on a traditional dinner with the addition of Mediterranean flavors. Start off the meal with brightly colored crudités served with a trio of dips: beet hummus, mint labneh and muhammara, a Middle Eastern spread that's made from roasted bell peppers and walnuts. A salad of shaved carrots and crisp sugar snap peas is dressed with a vinaigrette full of tart sumac and rich tahini, both staples in many Mediterranean cuisines. The centerpiece of the feast is a glazed ham lacquered with a mixture of pomegranate juice, brown sugar and orange zest. The crowning touch is a beautiful tart topped with pistachios and the strawberries that are just beginning to show up at the farmers’ markets.
