
Air Fryer Breakfast Burrito
This is one serious breakfast burrito! We load it with sausage, tater tots, melty cheddar, creamy avocado and jammy eggs, then spice things up with hot sauce mayo. Everything is cooked to perfection in an air fryer, so you don’t need any oil, just a little nonstick cooking spray. We know you’ll rise and shine for this flavor-packed morning meal—it’s a delicious way to jump-start your day.
Ingredients:
- 2 eggs
- 1 1/2 to 2 oz. (45 to 60 g) breakfast sausage patty or bacon
- 1/2 cup (2 1/2 oz./75 g) frozen tater tots
- 1 large burrito-size flour tortilla (10 to 12 inches/25 to 30 cm)
- 1 oz. (30 g) shredded cheddar cheese
- 1/4 cup (2 fl oz./60 ml) mayonnaise
- 1 to 2 Tbs. hot sauce, plus more if desired
- 1/2 avocado, sliced or lightly mashed
- Kosher salt and freshly ground pepper
Directions:
Preheat an air fryer to 300°F (150°C) according to the manufacturer’s instructions.
Gently place the eggs in the fry basket. Insert the basket into the air fryer and cook for 8 minutes for soft-cooked or up to 12 minutes for hard-cooked. Meanwhile, fill a bowl with ice and water. When the eggs are done, immediately transfer them to the ice water to stop the cooking. Let the eggs cool to the touch.
While the eggs cool, heat the air fryer to 400°F (200°C).
Lightly spray the fry basket with nonstick cooking spray. Place the sausage on one side of the basket and the tater tots on the other, then lightly spray the tots with cooking spray. Insert the basket into the air fryer and cook until the sausage is crisp and cooked through, about 8 minutes; remove the sausage from the air fryer. If the tater tots are crisp enough for your liking, remove them as well. If not, lightly spray them again with cooking spray, then continue cooking until crisp, about 3 minutes more. Set the sausage and tater tots aside. Keep the air fryer set at 400°F (200°C).
Peel the eggs and cut them in half crosswise. Set aside.
Sprinkle the tortilla with the cheese and place the tortilla in the fry basket. Insert the basket into the air fryer and cook just until the cheese is melted, about 1 minute. Keep the air fryer set at 400°F (200°C).
In a small bowl, stir together the mayonnaise and hot sauce. Arrange the eggs, sausage, tater tots, avocado and some of the hot sauce mayo on the tortilla. Season the eggs and the avocado with salt and pepper, then fold in the sides of the tortilla and roll into a burrito. Place the burrito in the fry basket, insert the basket into the air fryer and cook until the outside of the tortilla is crisp, 3 to 4 minutes. Serve immediately with the remaining hot sauce mayo on the side. Makes 1 burrito.
