This vibrant smoothie, bright with the color of frozen mango and fresh turmeric, is the perfect pick-me-up on a busy spring or summer day.

Ingredients:

  • 2 cups (8 oz./250 g) frozen diced mango
  • 2 scoops vanilla collagen powder
  • 1/2 cup (4 fl. oz./125 ml) coconut cream
  • Juice of 1/2 lemon
  • 1-inch (2.5-cm) piece fresh ginger, peeled and coarsely chopped
  • 1/2-inch (12-mm) piece fresh turmeric, peeled and coarsely chopped
  • A pinch of freshly ground pepper
  • Unsweetened coconut flakes for garnish (optional)
  • 1/2 cup (4 fl. oz./125 ml) water 
  • Small handful of ice

Directions:

In a Vitamix blender, combine the mango, collagen powder, coconut cream, lemon juice, ginger, turmeric and pepper. Add the water and ice. Blend on high speed until smooth. Divide between two small glasses or one large glass. Garnish with coconut flakes and serve immediately. Serves 1 to 2.
