Smoky Pomegranate Cocktail

A little bit sweet and a little bit tart, these beautiful crimson drinks are tailor-made for autumn. In this clever cocktail from Traeger, pomegranate juice and seeds are smoked, then frozen into cubes that cool down a blend of vodka and lemonade. Best of all, you can freeze the ice cubes a day or two in advance and assemble the cocktails just before serving.

Ingredients:

  • 2 cups (16 fl. oz./500 ml) pomegranate juice
  • 1 cup (4 oz./125 g) pomegranate seeds
  • 2 cups (16 fl. oz./500 ml) lemonade
  • 3/4 cup (6 fl. oz./180 ml) vodka
  • 4 lemon wheels for garnish
  • Fresh mint leaves for garnish

Directions:

Set the temperature on a Traeger wood pellet grill to 225°F (110°C), close the lid and preheat according to the manufacturer’s instructions for 15 minutes. For optimal flavor, use Super Smoke if available.

Meanwhile, in a shallow baking dish, combine the pomegranate juice and pomegranate seeds.

Place the pan on the grill and cook for 45 minutes. Let the juice and seeds cool to room temperature, then transfer to ice molds and freeze until solid.

When ready to serve, divide the frozen pomegranate cubes, lemonade and vodka evenly among 4 glasses. Garnish each with a lemon wheel and mint leaves and serve immediately. Serves 4.
