Grilled Chicken Skewers with Sweet Maui Onion Rub

When you’re hosting a backyard gathering, grilled skewers are always a crowd-pleaser, and these come together in a snap thanks to our Maui onion rub. Just sprinkle chicken cubes with the fragrant blend, thread onto skewers with red onion and bell pepper, and then grill. Add a side salad and a loaf of bread and your meal is complete.

Ingredients:

  • 1 lb. (500 g) chicken thighs, cut into 1-inch (2.5-cm) pieces
  • 2 Tbs. extra-virgin olive oil
  • 2 Tbs. Sweet Maui Onion Rub
  • 1 red onion, cut into 1-inch (2.5-cm) pieces
  • 1 red bell pepper, cut into 1-inch (2.5-cm) pieces
  • Kosher salt and freshly ground pepper

Directions:

If using wooden skewers, soak 4 long or 8 short skewers in water to cover for at least 30 minutes, then drain. Meanwhile, prepare a medium-hot fire in a grill. Place an outdoor griddle on the grill grate and cover the grill to preheat the griddle while you prepare the chicken.

Place the chicken in a bowl and drizzle with the olive oil. Sprinkle with the rub and toss to coat. Thread the chicken onto metal or soaked wooden skewers, alternating with the onion and bell pepper.

Place the skewers on the griddle, cover the grill and cook until the chicken is cooked through and the vegetables are just tender, about 10 minutes, turning the skewers once or twice during the cooking time. Transfer to a platter, season with salt and pepper to taste, and serve immediately. Serves 4.
