Frozen Aviation
Inspired by the gin-based Aviation cocktail, the Frozen Aviation puts a modern twist on this twentieth-century classic by swapping the gin with mezcal and chilling it to a slushy consistency. To create the “lemon button” garnish, cut a small round from the skin of the lemon using a small cookie cutter and set aside until ready to use.
Ingredients:
- 3/4 cup (6 oz./180 ml) water
- 3 oz. (80 ml) lemon juice
- 1 1/2 oz. (45 ml) crème de violette
- 3 oz. (80 ml) Luxardo Maraschino Liqueur
- 6 oz. (180 ml) mezcal
- 1 oz. (30 ml) simple syrup
- 2 to 4 lemon buttons (see headnote)
- 2 to 4 maraschino cherries or fresh dark cherries
Directions:
In a large pitcher, combine the water, lemon juice, crème de violette, Luxardo, mezcal and simple syrup and stir to combine. Pour into the bowl of the GreenPan Frost Ice Cream & Frozen Drink Maker. Set the machine to Spiked Slushie, turn the knob to L4 and start the machine. The machine will chime once ready, about 30 minutes. Pour the cocktail into 2 to 4 cocktail glasses and garnish each with a lemon button and maraschino cherry. Serve immediately. Serves 2 to 4.
