Crispy Fried Eggs in Calabrian Chili Butter

“I love a buttery fried egg in the morning, especially with hot sauce,” says cookbook author and TikTok star Jeremy Scheck, “and Calabrian bomba paste is the perfect way to add in that flavor to the cooking process, instead of using it as a topping.” This simple breakfast is featured in Scheck’s new book ScheckEats—Cooking Smarter.” To make a dairy-free version of this dish, simply swap the butter for the same amount of olive oil.

Ingredients:

  • 1 to 2 Tbs. unsalted butter
  • 1 or 2 large eggs
  • 1 tsp. Calabrian chili bomba paste
  • Kosher salt and freshly ground black pepper

Directions:

Heat a skillet over medium heat for 2 minutes before doing anything else.

Add enough butter to generously coat your pan.

When the butter is bubbly and spread out, crack the eggs over the pan (I break them on the counter and open them over the pan).

Let the eggs cook over medium heat (do not touch them) until the edges start to become golden. Tilt the pan a little so the butter pools at the bottom and use a small spoon to baste the uncooked parts of the whites, avoiding the yolk. Stir the chili paste into the butter in the pan. The eggs will take a couple minutes to cook.

Season with salt and pepper. If you want the top cooked more, you can use a metal spatula to flip the eggs and cook for another minute or two. It can be helpful to slide the spatula under the yolks before flipping to make sure they are loosened. Serves 1.
