Loaded with fresh, frozen and dried berries, this colorful bowl makes a nourishing breakfast on a summer morning. The recipe calls for acai puree, which is made from the acai berry that grows in South America and is a nutritional powerhouse. You’ll find the puree in the freezer section of well-stocked markets and health food stores. When processed in a blender with the fruit and other ingredients, it becomes a smooth, thick puree, akin to a smoothie.

Ingredients:

For the acai bowl:

  • 1/2 banana, peeled
  • 3/4 cup (3 oz./90 g) frozen strawberries
  • 3/4 cup (3 oz./90 g) frozen raspberries
  • 1 packet (3.5 oz./105 g) frozen acai puree, broken into chunks
  • 1/2 cup (4 oz./125 g) plain whole-milk Greek yogurt
  • 1/3 cup (3 fl. oz./80 ml) apple juice
  • 3 tsp. honey


For the toppings:

  • 1/2 banana, peeled and sliced
  • 1 or 2 fresh strawberries, halved
  • 6 fresh blackberries
  • 1 Tbs. dried blueberries
  • 2 tsp. goji berries
  • 1 tsp. bee pollen
  • 1/2 tsp. chia seeds

Directions:

To make the acai bowl, in a blender, combine the banana, frozen strawberries and raspberries, acai puree, yogurt, apple juice and honey and blend on high speed until the mixture forms a smooth puree. Pour the acai mixture into 1 large or 2 smaller bowls.

Arrange the sliced banana, fresh strawberries and blackberries, dried blueberries and goji berries on top. Sprinkle with the bee pollen and chia seeds and serve immediately. Serves 1 to 2.
