Raspberry Custard Toast

This satisfying, TikTok-famous treat comes together quickly with just a handful of simple ingredients. Hand-crushing the raspberries with a mortar and pestle is our preferred method for preparing the fruit but tossing them in a blender also works. An optional garnish of powdered sugar adds a touch of sweetness.

Ingredients:

  • 4 slices of brioche, about 1/2 inch (12 mm) in thickness
  • 1/4 cup (2 oz./60 g) full-fat Greek yogurt
  • 1 egg
  • 1 tsp. vanilla bean paste or vanilla extract
  • 1 Tbs. maple syrup
  • 1 small handful of freeze-dried raspberries
  • 4 fresh raspberries (optional)
  • Powdered sugar for garnish (optional)

Directions:

Preheat an oven or air fryer to 350°F (180°C).

Using a mortar and pestle, crush the freeze-dried raspberries into a fine powder; or, alternately, blend them in a small blender or grind with a spice grinder.

Using your fingers, flatten the center of each bread slice to create a heart-shaped indent in the middle. Set aside.

In a medium bowl, whisk together the yogurt, egg, vanilla and maple syrup until well combined. Whisk in 1 Tbs. of the crushed or blended freeze-dried raspberries.

Spoon the mixture into the heart-shaped indent of each bread slice. If desired, place 1 raspberry in the center of each bread slice.

Working in batches, bake the bread slices in the air fryer or oven until the custard is set, about 5 minutes.

Carefully remove the toast from the air fryer or oven, dust with powdered sugar, if desired, and serve. Serves 4.
