Spicy Thai Peanut Ramen

Nothing beats a big bowl of ramen noodles for a warming lunch, dinner or midnight snack. Here we transform ramen and PB—those college-student pantry staples—into a Thai-inspired soup that gets a kick of heat from sriracha.

Ingredients:

  • 3 Tbs. peanut butter
  • 2 Tbs. soy sauce
  • 1 Tbs. sriracha, plus more for serving
  • 1 Tbs. oil (preferably sesame oil but vegetable oil or olive oil will do!)
  • 1 package ramen noodles with flavor packet
  • Chopped peanuts for serving (optional)
  • Sliced scallions and/or chopped fresh cilantro for serving (optional)
  • Lime wedge for serving (optional)

Directions:

In a small bowl, stir together the peanut butter, soy sauce, sriracha and oil; set aside.

Prepare the ramen noodles according to the packaging instructions. Immediately stir the peanut butter mixture into the hot ramen until smooth and melted. Top with more sriracha, peanuts and scallions and add a squeeze of lime juice. Now eat! Serves 1.
