Roasted Salmon with Honey and Dill

Salmon is such a flavorful fish that it needs little adornment. Here we brush a whole side of salmon with a simple mixture of olive oil, honey, garlic and dill, which lends a sweet, herbal note, then roast it in a hot oven. Finish with a squeeze of lemon and you’ve got a beautiful main course for a springtime meal.

Ingredients:

  • 1 side of skin-on salmon, about 2 lb. (1 kg)
  • Kosher salt and freshly ground pepper
  • 1/3 cup (3 fl. oz./80 ml) extra-virgin olive oil
  • 2 garlic cloves, minced
  • 3 Tbs. chopped fresh dill, plus sprigs for garnish
  • 2 1/2 Tbs. honey
  • 1/2 lemon, plus lemon slices for garnish

Directions:

Preheat an oven to 400°F (200°C).

Pat the salmon dry with paper towels. Season lightly on both sides with salt and pepper. Place, skin side down, on a baking sheet.

In a bowl, whisk together the olive oil, garlic, chopped dill and honey, then whisk in 3/4 tsp. salt and 1/2 tsp. pepper. Brush the salmon with half of the mixture.

Roast until the salmon is cooked to your liking, 10 to 12 minutes for medium, brushing it with the remaining olive oil mixture halfway through roasting.

Transfer the salmon to a platter and squeeze the lemon half over the fish. Garnish with dill sprigs and lemon slices and serve immediately. Serves 4 to 6.
