We love mixing up a batch of these cocktails on spring afternoons when the bright flavor of Meyer lemon matches the vibes of the Californian sunshine. Because this drink is so simple, the details matter. We like using a clean and crisp tonic, such as Fever Tree, and a London dry gin, such as Tanqueray. About 20 minutes before mixing the drink, we suggest placing the gin bottle and glasses in the freezer. And if you want to take a more classic approach, simply swap the lemon wedges for limes.

Ingredients:

  • 2 fl. oz. (60 ml) cold gin
  • 2 Meyer lemon wedges, separated, plus a 1/2-inch lemon round for garnish
  • 5 fl. oz. (155 ml) tonic water

Directions:

Pour the gin into a cold lowball glass filled with ice and add a squeeze of lemon juice. Add the tonic and another squeeze of lemon juice and stir gently to combine. Garnish with a slice of lemon and serve immediately. Makes 1 drink.
