This marinade lends a deep malt flavor to grilled meats. Use it on pork, game birds and poultry. For the best flavor, choose a top-quality dark beer such as Guinness.

Ingredients:

  • 3/4 cup dark beer 
  • 1/2 cup apple juice concentrate, thawed 
  • 1/4 cup firmly packed light brown sugar  
  • 1 Tbs. coarse salt 
  • 1 Tbs. freshly cracked pepper  
  • 1 Tbs. fresh rosemary 
  • 5 allspice berries 
  • 3 whole cloves 

Directions:

In a nonaluminum bowl, stir together the beer, apple juice concentrate, brown sugar, salt, pepper, rosemary, allspice berries and cloves.

Use to marinate meat for at least 1 to 2 hours, or cover tightly and refrigerate for up to 2 days. Makes 1 1/4 cups.

Rated 5 out of 5 by from Very Easy, Made Great Pork Chops I made using a brown ale, "Moose Drool" by Big Sky Brewing. I sliced my own pork loin into chops and marinated them in a gallon bag in refrigerator for about 9 hours. I then cooked them on a Le Creuset Skinny Grill on the stove for about 4 minutes per side. They were great without any other seasoning or sauce! Very easy and well received by my guests! It will be fun to play around with other beers and meats. I like that there is no oil in the recipe, so I'm calling it healthy compared to most. I froze the rest of the apple juice concentrate in 2 snack size bags of 4 oz each so ready to use in next batch.
