Dark Beer Marinade

This marinade lends a deep malt flavor to grilled meats. Use it on pork, game birds and poultry. For the best flavor, choose a top-quality dark beer such as Guinness.

Ingredients:

  • 3/4 cup dark beer 
  • 1/2 cup apple juice concentrate, thawed 
  • 1/4 cup firmly packed light brown sugar  
  • 1 Tbs. coarse salt 
  • 1 Tbs. freshly cracked pepper  
  • 1 Tbs. fresh rosemary 
  • 5 allspice berries 
  • 3 whole cloves 

Directions:

In a nonaluminum bowl, stir together the beer, apple juice concentrate, brown sugar, salt, pepper, rosemary, allspice berries and cloves.

Use to marinate meat for at least 1 to 2 hours, or cover tightly and refrigerate for up to 2 days. Makes 1 1/4 cups.
