Cherry Oolong Mimosa
Elevate brunch with this twist on the classic mimosa. Here, we swap orange juice for cherry liqueur and create nuanced flavor with the help of oolong, a type of Chinese tea. Oolong can vary in taste, from honeyed and fruity to roasted and green, but the overall profile lends itself well to the bright, citrusy bubbles.
Ingredients:
For the oolong tea:
- 2 cups (16 oz./500 ml) water
- 4 oolong tea bags
For 1 cocktail:
- 1 oz. (30 ml) chilled oolong tea
- 1 1/2 oz. (45 ml) Luxardo Cherry Liqueur
- 1/4 oz. (45 ml) fresh lime juice
- 3 oz. (80 ml) chilled sparkling wine
- Fresh cherry for garnish (optional)
- Fresh thyme sprig for garnish (optional)
For 8 batched cocktails:
- 1 2/3 cup (13 oz./310 ml) Luxardo Cherry Liqueur
- 1 cup (8 oz./250 ml) chilled oolong tea
- 1/4 cup (2 oz./60 ml) plus 2 tsp. fresh lime juice
- 1 bottle (750 ml) chilled sparkling wine
Directions:
To make the oolong tea, in a small saucepan over high heat, bring the water to a boil. Remove from the heat, add the tea bags and steep for 5 minutes. Strain and let cool to room temperature. Transfer the tea to a container and chill in the refrigerator for at least 2 hours or up to 1 week.
To make 1 cocktail: In a cocktail glass, stir together the liqueur, tea and lime juice. Pour into a martini glass or Champagne flute and top with sparkling wine. Garnish with a cherry and fresh thyme sprig.
To make 8 batched cocktails: In a punch bowl or beverage dispenser, stir together the liqueur, tea and lime juice. Top with the sparkling wine.
