Breakfast Fingerling Potatoes

Gaby Dalkin, cookbook author and found of What’s Gaby Cooking, created her This is Everything Seasoning—inspired by the bagel of the same name—to add savory crunch to, well, just about everything. Here she tosses the blend with fingerling potatoes, which are ideal for roasting because they hold their shape well and, when halved lengthwise, have lots of surface area for browning. For a pretty presentation, use multicolored fingerlings if you can find them. A shower of fresh herbs finishes the dish with a springtime flourish.

Ingredients:

  • 2 lb. (1 kg) fingerling potatoes, halved lengthwise
  • 2 Tbs. (2 fl. oz./60 ml) extra-virgin olive oil
  • Kosher salt and freshly ground pepper
  • 1 1/2 Tbs. Gaby’s This Is Everything Seasoning
  • About 1/4 cup chopped mixed fresh herbs, such as flat-leaf parsley, dill and chives

Directions:

Preheat an oven to 425°F (220°C).

In a large bowl, toss together the potatoes and olive oil and season with salt and pepper. Divide the potatoes between 2 baking sheets, spreading them out in a single layer cut side down.

Roast the potatoes for 20 minutes, then remove from the oven and sprinkle with Gaby’s This Is Everything Seasoning. Give them a toss and continue to roast until golden brown and tender, 15 to 20 minutes more.

Transfer the potatoes to a platter, sprinkle with the herbs and serve. Serves 6.
