This cocktail has Sophie Flay written all over it, says her dad, award-winning chef and cookbook author Bobby Flay. As soon as she was old enough to order a drink, Sophie’s go-to call over the bar was a Moscow Mule, a classic made with vodka, ginger beer and lime. Flay says that a few yeas ago, Sophie discovered her affection for the smoky, rich Mexican spirit mezcal, which inspired the pair to create this Mule remix for their new book Sundays with Sophie. Bobby’s favorite tequila for this drink is El Jimador blanco.

Ingredients:

  • 1 fl. oz. (30 ml) mezcal
  • 1 1/2 fl. oz. (45 ml) silver tequila
  • 1/2 fl. oz. (15 ml) fresh lime juice
  • Ice
  • 4 fl. oz. (125 ml) ginger beer
  • 1 lime wheel

Directions:

In a copper mug or glass, combine the mezcal, tequila and lime juice and stir together. Add ice to fill the mug or glass. Top with the ginger beer, garnish with the lime wheel and serve immediately. Makes 1 cocktail.
