
Black Truffle Steaks with Herb Butter
Butter blended with fresh herbs, known as a compound butter, makes a simple but delicious embellishment for grilled rib-eye steaks that have been seasoned with our exclusive rub that highlights the rich, earthy flavors of truffles by pairing them with aged Parmesan cheese and a hint of black pepper.
Ingredients:
- 4 rib-eye steaks, each about 1 inch (2.5 cm) thick
- 2 Tbs. Black Truffle Rub
- 3 Tbs. unsalted butter, at room temperature
- 2 Tbs. snipped fresh chives
- 1 Tbs. minced fresh rosemary
- Kosher salt and freshly ground pepper
Directions:
Sprinkle the steaks evenly on both sides with the Black Truffle Rub. Set aside at room temperature for 30 to 45 minutes.
In a small bowl, stir together the butter, chives, rosemary and a pinch each of salt and pepper. Cover and refrigerate until ready to serve.
Prepare a hot fire in a grill and oil the grill rack.
Place the steaks on the grill rack and cook, turning once, until an instant-read thermometer inserted into the center of a steak registers 130°F (54°C) for medium-rare, 6 to 8 minutes total, or until cooked to your desired degree of doneness.
Place each steak on a plate, top with the herb butter and serve immediately. Serves 4.
