Combining the benefits of a chef's knife and cleaver, this hollow-ground santoku is indispensable for chopping, slicing and dicing. Oval indentations on the blade's sides reduce friction to produce clean, uniform cuts and minimize sticking.

Use & Care


  • Always use caution when handling sharp objects.
  • Avoid cutting on hard surfaces such as stone, metal or glass.
  • It is not advisable to use any knife but a meat cleaver to cut through bone, as other blades can be easily damaged.


  • Hand-wash with warm water and a mild detergent; rinse and dry immediately.
  • Avoid cleaners containing bleach or citrus extracts.
  • Sharpen as needed. With regular use and honing once a week, your knife should not need sharpening more than once or twice a year.
  • Sharpen your knife at home using a whetstone or knife sharpener designed to sharpen at a 16-degree angle, or have it sharpened by a professional.
  • Store knife in a safe place to protect its edge and prevent injury.

For an additional charge of $26 per address, we can expedite delivery to most destinations. This service is not available for some oversize items, items shipped directly from the supplier (including perishable and custom-manufactured items), out-of-stock items and items to be shipped outside the contiguous 48 states.

Orders received by 9:00 p.m., Eastern time, Monday through Thursday will arrive the next business day; orders placed Friday through Sunday will arrive on the following Tuesday.

Return Policy

At Williams Sonoma, we take great pride in the quality and craftsmanship of our products. Attention to design, materials, safety and construction are our priority. Upon receipt, please inspect your purchase and notify us of any damage; we will arrange for a prompt replacement.

If within 30 days, you are dissatisfied for any reason, you may return your purchase for a refund of the merchandise value. An original receipt or gift receipt is required for all returns and exchanges. Returns with a gift receipt will be refunded in the form of a Merchandise Credit for the amount indicated on the gift receipt. Returns with original receipt will be refunded in the original form of payment, cash and check refunds over $100 will be issued as a company check (may take 14 business days from time of request).

We cannot accept returns on monogrammed, personalized, special-order items, custom upholstery, food, items shipped direct from the vendor, or on items damaged through normal wear and tear. Final sale items ending in .97 or .99 cannot be returned.

Reading reviews led me to Shun, and the associate at the store led to me this beauty. The blade is perfectly curved for rocking cuts. It comes razor sharp, stays razor sharp, is perfectly balanced, and stunning to look at. The only complaint I have is that the handle tends to build and hold on to residue, but the blade wipes right off. Any other knife I purchase will certainly be a Shun!

    Rated 5 out of 5 by from Wicked sharp! I bought the Shun 5-1/2” Santoku to replace my Wusthof Gourmet 5” Santoku and I am very pleased! The Shun balances well in my hand. Since I use a forward pinch grip, the small handle is unobtrusive and out of the way.

Where the monogram used to be is now a shadow of my initials! I ALWAYS wash my knives by hand and NEVER put them in the dishwasher! I am a home Chef and entertain often, I cook daily and by that I mean I use my knives Every Day! And Every Day I Look At The Ugly Quality Of My Monogram! I so wish I had not paid extra for the monogram. I don't usually write negative reviews...but feel strongly about the poor quality! I called customer service and they called this wear and tear! The Shun knifes are wonderful...My review is about the monogram which is ALL William Sonoma!!!! DON"T GET THE MONOGRAM!!!!!!!!

He uses his own knives at work so it was great to have this one personalized with his initials. He's also left-handed and this is the first left-handed edge he's used. He absolutely loves it! This is his second Shun knife (also has a chef's knife) and they are his favorites. I had no problem ordering on the website and it arrived on time, as promised.

    Rated 4 out of 5 by from Very sharp, holds edge, works well I'm a home cook working on becoming a home chef. Had been using the Shun Classic 5 in. Santoku for some time and really liked it. When the need for a larger knife came up, decided to stick with Shun and bought the 7 in. Both knives are extremely sharp (on first use managed to nick myself & draw blood with no effort) and hold their edge well. That it comes with a right- or left-hand handle is a nice feature. Good heft & feel. Excellent value for home use. Has a relatively thin blade that is great for chopping and slicing but requires care in cleaning and storage. Can't speak to how it would hold up under heavier use pros would give it.
