Mornings in Paris find early risers at neighborhood patisseries, where specialties include freshly baked delights like mouthwatering morning buns. Jean-Yves Charon uses his skills as a French pastry chef to create our tempting buns, which are prepared from scratch using his signature recipe, a buttery croissant dough and a brown-sugar filling enhanced with cinnamon and orange zest. Simply let the frozen pastries rise overnight, then bake in the morning and enjoy the golden-brown, flaky treats warm from the oven.

- The morning buns ship frozen with dry ice. Please take care not to touch the dry ice with bare hands. Upon receipt, remove morning buns from shipping container and place in the freezer, where they will keep for up to one month.
- Discard the plastic shrink-wrap and the lid, but keep the morning buns in the aluminum tin. Place the tin of frozen buns on a baking sheet and let rise at room temperature for about 9 hours or overnight.
- Position a rack in the lower third of an oven and preheat to 350°F. Transfer the baking sheet to the oven. Bake the buns until the tops are golden brown, 25 to 30 minutes, rotating the sheet 180 degrees halfway through the baking time to ensure even browning. Let the buns cool for 1 minute, then turn the tin over onto the baking sheet and remove the buns.
- In a bowl, stir together 1⁄2 cup sugar and 1 tsp. ground cinnamon. Add the buns one at a time and toss to coat evenly with the sugar mixture. Serve warm. Makes 12 buns.
- Enriched flour (wheat flour, niacin, iron, thiamine mononitrate, riboflavin, folic acid, enzyme, ascorbic acid [dough conditioner]), butter, water, sugar, brown sugar, orange zest, cinnamon, salt, dough conditioner blend (wheat flour, malted barley flour, ascorbic acid [dough conditioner], enzymes).

Rated 3 out of 5 by KCSD from Used to be better! When I first got to know these Morning Buns, they were more flaky and came out of the oven looking exactly like the advertising pictures. It's not the same with my recent orders, some were very disappointing, and I claimed it probably because I purchased the steep discounted buns or didn't select the correct item! Tried again with a 24-set order (using 20% disc promo). Baked a tin in my Philips AirFryer XL (purchased from WS years ago; excellent product), on its tray (not its basket). The buns came out once again rather chewy than flaky. Just to be clear, the buns were raised properly overnight, at least 12 hours, in San Diego weather (not really freezing cold in Jan). Upon arrival the box had obvious signs of leaking. The dry ice was gone, but the pastry was still semi frozen on 2 of the 3 packages. I kept out the top package, the most thawed one and put the rest in the freezer. I let them do their thing on a sheet pan lined and covered with parchment and baked the next morning. They are so delicious and the hint of orange is perfect. I rolled them in sugar and cinnamon while warm. So happy with these. For my recent order, the buns came completely thawed and starting to rise when I opened the box. There wasn’t enough dry ice or they were not packaged properly. I let WS know and did not request another order. However, the customer service rep immediately sent out another order and apologized. I was impressed and pleased with their service. I did make the mistake of baking the buns even though they did not rise and had been completely thawed upon arrival. I served them to a few family members and I ate one myself which was not a great idea. We were all sick. Lesson learned. My replacement buns were completely frozen upon arrival and tasted great. I love these buns and think WS stands by their products. There’s no change in the recipe over the years that I can find. A lot of complaints and a lot of 5 stars on here. Why the disparity? You can’t rise dough on a countertop in the winter. If they aren’t rising, the ambient temperature isn’t high enough. I place them in the oven with an incandescent light bulb on an extension cord. I use a digital thermometer and it usually gets about 95 degrees. They rise every time. No exceptions. Even if stored in the freezer beyond the expiration date. If they don’t turn out, you’ve almost certainly done something wrong. I’ve made these literally dozens of times over many years of orders. Never a fail. Ever. You’ve got to have rudimentary baking skills and a simple understanding how to activate yeast.
