The Miyabi Birchwood Rocking Santoku Knife, 7" has a Rockwell hardness of 63 for a razor-sharp blade.
It is a traditional three-step hand-sharpening method that includes a final mirror polish and hones the blade to an exceptionally sharp 9.5–12 degree angle.
The handle is made from Karelian (Masur) birch in a traditional ergonomic D-shaped design.
