- Oven Fried Chicken with Baby Spinach Salad
Preheat an oven to 450°F. Brush a large rimmed baking sheet with olive oil.
In a food processor, grind the tortilla chips finely and transfer to a pie dish. Stir in the marjoram, cumin and cayenne pepper. Brush the chicken on all sides generously with olive oil, and season with salt and black pepper. Add the chicken, 2 pieces at a time, to the crumb mixture and turn to coat on all sides, pressing into the crumbs to help them adhere. Arrange the pieces, skin side up, on the baking sheet.
Transfer to the oven and roast until the crust is brown and the chicken is cooked through, about 35 minutes. Let stand for 5 minutes to crisp.
Put the lime juice in a small bowl. Gradually whisk in the 1/4 cup olive oil to make a vinaigrette. Season with salt and black pepper. In a salad bowl, combine the spinach and tomatoes. Add the vinaigrette and toss to coat. Divide the chicken and salad among individual plates and serve immediately. Serves 4 to 6.

If I could find replacement work bowls and lids for our 20 year old but magnificent Kitchenaid food processor (the plastic parts just wore out, but not the blades or 600 watt motor)- answer no; then B. What to get to replace it. It’s a tool I use almost everyday. The Kitchenaid was the best model for years when it came out (old model made in France; but the new ones are made in China). I read countless professional and anecdotal reviews, price compared, features and weight compared, watched videos, looked for recall announcements, etc. and fell in lust with industrial models (Big horsepower, all metal, but price point difference between lowest prosumer and highest consumer is about 1k!) Finally I settled on the consumer level Magimix 4200xl, by the French company that created the food processor (and makes many of the top prosumer models), Robot Coupe. This plain but powerful tool has been around for a while, comes in 3200 (12 cup), 4200 (14 cup), and 5200 (16 cup) levels and the 14 cup is consistently the most reliable. Free shipping (it weighs 28lbs) sealed it for me. The Magimix has 950 watts (1.2 horsepower). Big motors can be a problem in some company models like the Breville (Too much power for the consumer plastic parts in the current design of the 16 cup). I’m irrationally excited about it. The motor comes with a 30 year warranty! (That’s some bragging for a company) Simple, powerful, well designed, useful. I don't use it more than once every month or two, but it's a very useful, functional item. The motor works well and the base is substantially weighted so that the processor doesn't "walk" away when I'm using it. The bowls are a bit of a let down since they are cheap plastic, and I don't find the middle bowl to be worthwhile at all, but I do use the large and small quite a bit. I bought an additional set of grating/slicing/julienning disks, along with the accessories that came with the machine and find them all to be sharp and brutally effective. I prefer this item to my Kitchen Aid stand mixer for dough, even! In spite of my love for this product, I cannot recommend that anyone buy it. STAY AWAY. GO WITH A DIFFERENT BRAND!!! When I moved a few years ago, a hairline vertical crack developed during the (professional) packing/moving/unpacking process in the black plastic handles of both the lid and the large bowl. Though disappointing, I though "no big deal." I'll just continue to use it. Nope. Without the complete contacts of the black handles with the machine, the fail-safe triggers and the processor won't run. Ok, I'll glue it. Nope. Didn't last more than 1-2 sessions. Fine, I will contact Magimix for replacement parts. Not even a little nope--more of a giant black hole of NO. I have sent 4 emails now, since their website so helpfully tells you that you can only contact "firstname.lastname@example.org" and that their prior customer service number is "no longer in service." Turns out their customer service is no longer in service. I haven't heard back A SINGLE TIME over the past 4 months about where I can stupidly spend MORE OF MY MONEY to buy their cheaply made plastic bowls. So now I'm mad. Don't become like me! Give your money to a company who supports their product. Honestly, Williams-Sonoma, though courteous, has been only barely less worthless than Magimix--they don't care to carry their replacement parts and have no way of getting in touch with the Magimix company either. Nor do they offer any helpful suggestions on where to find any. So ultimately, if anything ever goes wrong with pieces of your 4200XL, you're done. I could not be happier with this appliance. So far, I have used the blades and the shredding disks. It has incredible power and my favorite is that it can finely chop loose fresh herbs--one of the more tedious tasks that I detest. I had a Cusinart from the late 90's but only used the chopping blade because I had problems getting the other attachments off of the stem. Getting them on, easy; off, not so much. I gave it away and got the Magimix. Love it. Very powerful. Heavy. Doesn't "walk" all over the countertop when kneading bread. My only wish is that Williams-Sonoma would offer the colors that are available in Europe. Haven't we done enough of the stainless-steel look here? I'm not sure why people complain about not finding additional attachments. I've purchased additional attachments since I had mine. All you have to do is go to the Magimix USA website, go to the bottom of the page where it says Service and Spare Parts and click. It will tell you which website to visit or email. Google more; complain less. One word of caution. Be sure to wipe off the black rubber feet of the appliance so that marks are not left on your countertop or butcher block cart. A hand made motor - made in France (not China), multiple accessories let it dice, slice, blend (yes - like a blender when using the Blendermix attachment), chop, shred, puree, make fruit juice smoothies, french fry maker (some of these accessories will have to be hunted down as they're not carried by WS). With a very strong commercial food processor (Robot Coupe who also invented the food processor) background and a crazy long motor warranty (as mentioned its hand made) how can you go wrong?
