First thing I made was fondant potato’s. Cause if your gonna torture a pan this is a great way to do it. Executed perfectly, cleaned up with minimal effort. Was kind of shocked so I looked up to see what this pan was. Oh snap, this pan is $280 and I just flames the heck out of it. Not a single scratch, scorch or stain. Next up was a sunny side up eggs. A tab of butter, 2 eggs and a few minutes later I grabbed the pan to see if they would slide out on there own or if I was going to need a spatula. The slide off, right on to the plate. Witchcraft ! Well, I’ve used this pan all week for various meals. One thing I did notice was that salt does stick the food to the pan so don’t use too much. It’s does stick, but always releases with a slight nudge. Keep the heat medium to low, the heat stays even and also releases fast so if you start to smoke just lift off the burner for a few seconds to bring the temp down. When I saw the 8 1/2" skillet was on sale, I bought it because it is beautiful. I have had it for about 2 weeks now and use it every morning to cook eggs. I always heat the pan on low heat first, then spray with cooking spray, add a bit of butter, then the eggs. I make scrambled eggs and fried eggs and they do not stick. I have tried French toast and grilled cheese sandwiches, too. The French toast did not stick nor did the sandwich. However, some of the cheese melted and burned onto the pan. When I went to clean the pan, it cleaned out perfectly and easily. I haven't tried cooking anything on a higher heat, so I can't speak for how it cleans then. The pan is nicely balanced for a lady who is almost 70 and has weak wrists. I ordered the 5 qt. pan for my husband who is the real cook in the family. The Heston nanobond was by far the winner. The other pans were excellent but the food just tasted better when we cooked in the Heston which speaks to the even heat distribution and over quality. The look of this product is very distinct and shows a lot of craftsmanship. Thought this new and expensive pan with reported technology would provide some non-stick quality. Scrambled eggs are just Ok, but for frying eggs or making pancakes, these pans (we have three) are terrible. Even with loads of butter, which makes the food more unhealthy, you have to scrape to get most of the pancake off the pan. Then the residue remains, and you need to pry it off before pouring more batter. Cast iron is so much better for eggs and pancakes. What is the trick to cooking eggs?? Scrambled seem to be fine, but sunny side up stick horribly no matter how much fat I use.Hi Anita, The trick is to start with medium heat and some butter. When the butter starts to bubble, add your egg. When the butter starts to bubble again and get frothy, gently release the egg around its edges. If you start moving your pan around in a circular fashion, the egg should glide around the pan and the frothy butter should get on top of the egg white to help it cook more evenly.
