Sautéed Spinach with Garlic
Thinly sliced garlic cloves boost the flavor of this easy side dish, which makes a wonderful accompaniment to our beef tenderloin with Pinot Noir sauce (see related recipe at left).
- 2 Tbs. olive oil
- 2 garlic cloves, thinly sliced
- 1 1/2 lb. (750 g) spinach
- Kosher salt, to taste
In a large nonstick fry pan over medium heat, warm the olive oil. Add the garlic and cook, stirring constantly, until fragrant, about 30 seconds. Add the spinach in batches and cook until wilted, 2 to 3 minutes. Season with salt and serve immediately. Serves 6 to 8.
