While it’s simple to buy a knife set with all the pieces you need, you can also create a collection that’s tailored exactly to your cooking needs. The right knives can help you do things like cut meat off the bone, slice roasts, fillet fish and create intricate cuts in vegetables for presentation, and certain specialty knives can help you complete each slice or chop with easy. A boning knife, for example, helps you slice raw meat away from bones. A cleaver, on the other hand, helps you cut right through those bones. For most home cooks, the ideal set consists of a few standard utility knives, such as a chef’s knife, paring knife, chopping knife and serrated bread knife. At Williams Sonoma, we offer simple cutlery sets with these all-purpose pieces. Then, you can add on specialty extras like carving knives, and there are plenty of options to consider. More advanced knife sets can come with 10 or more pieces that include both general-purpose utility knives and specialty blades for precision cuts.

Storage Options

Most knife sets come with a storage block or other container, though some do not come with storage. You can also find empty knife blocks and storage options to build your own set. Both magnetic and wooden options are available to help preserve knives in your home kitchen. You can also discover sets that come with portable storage bags or cases for on-the-go food prep. Keep in mind that a magnetic strip or block will not work with ceramic knives. If you intend to add additional knives made out of this material to your cutlery set, go for storage options with slots that don’t use magnets to hold the knives.

Other Pieces

Some knife blocks also come with additional tools such as kitchen shears and honing blades or sharpeners, creating even more versatility with your set. These sets are especially helpful if you’re building your collection of kitchen tools from scratch or upgrading an old set. A honing steel serves a different purpose than a sharpener; honing keeps the blade of a metallic knife from bending, which is important for maintaining a sharp cutting surface. Just remember that it doesn’t actually sharpen the blade. To keep your knives like new, use both a honing steel and a sharpener. Some chefs even hone their knives before or after each use and sharpen monthly.

Think about the kind of food-prep tasks you tend to do often in your kitchen before you pick out a cutlery set. If you’re new to the world of home cooking and aren’t sure which knives you’ll need, start with a basic set and upgrade to add more knives later. Aside from knife and storage type, you can also consider material, handle shape and brand as you make your decision.
