Ingredients:

  • 5 sprigs fresh mint
  • 3-inch knob fresh ginger, sliced 
  • 1 lime, sliced 
  • 1 tsp. black peppercorns
  • 8 cups (64 fl oz./1.9 l) water

Directions:

In a Dutch oven, combine the mint, ginger, lime and black peppercorns. Cover with water and bring to a simmer over low heat. Continue to simmer, uncovered, for up to 2 hours.
