Grilling pizza gives it a delicious smoky flavor that goes perfectly with the BBQ pizza sauce. Prepared with our specially designed steel grill pan, the pizza emerges with a crisp, chewy crust.

Ingredients:

  • Olive oil for brushing
  • 1/2 batch Food Processor Pizza Dough
  • 1/2 cup BBQ pizza sauce
  • 1 cup grated mozzarella cheese
  • 1/2 cup grated cheddar cheese
  • 1 cup shredded cooked chicken
  • 1/4 small red onion, thinly sliced
  • Fresh cilantro leaves for garnish

Directions:

Preheat a grill over high heat, keeping the center burner on medium-low to low heat. Lightly brush a steel grill pizza pan with olive oil.

On a lightly floured surface, roll out the pizza dough into a 12-inch round and transfer to the prepared pizza pan. Spread the sauce evenly on the dough, leaving a 1/2-inch border uncovered. Sprinkle with the mozzarella and cheddar cheeses. Top with the chicken and onion.

Place the pizza pan in the center of the grill and cover the grill. Bake until the crust is crisp and well browned and the cheese is melted, 5 to 6 minutes. Transfer the pizza to a cutting board and top with cilantro leaves. Cut into slices and serve immediately. Makes one 12-inch pizza.

Rated 5 out of 5 by from Everyone loves this! We have homemade pizza every Friday night. This one is very popular. We have made this for guests as well and received rave reviews. When we order BBQ chicken pizza out at a restaurant we never feel that it is better than what we make at home. The sauce for this recipe is not overly sweet (which we prefer). Another bonus is that the pizza is simple to make and comes together quickly.

Rated 5 out of 5 by from really good I first tasted this at the in-store technique class on pizza. The basic dough recipe is easy and excellent. I learned that I probably needed to preheat my stone thoroughly (at least 45 minutes at 450). I made this in the oven rather than the grill and it took about 8-9 minutes on the stone. I was totally reeled-in on making this when the "chef" in the store suggested it was a great use for leftover rotisserie chicken---what a great idea! He also suggested "marinating" the shredded chicken in a couple tablespoons of the BBQ pizza sauce and that was a great idea as well. Half of the rotisserie chicken would have been enough for 3 of these pizzas. Enjoy!
