It’s easy to enjoy the authentic flavors of Mexico using the sauces and seasonings from Aarón Sánchez, an award-winning chef and cookbook author. His Garlic Chipotle Love Sauce, a blend of roasted garlic, smoky chipotle chiles and lime, makes a wonderful marinade for shrimp ceviche—perfect served with plantain or tortilla chips alongside. You’ll find lots of other uses for this bright and savory sauce: stir it into guacamole, serve as a dip for chips or fries, or dollop over grilled meat, chicken or seafood.

Ingredients:

  • 1/2 cup (4 fl. oz./125 ml) Aarón Sánchez Garlic Chipotle Love Sauce
  • 1/3 cup (3 fl. oz./80 ml) fresh orange juice
  • 1/4 cup (2 fl. oz./60 ml) fresh lime juice, plus more as needed
  • 2 Tbs. mango puree
  • 2 Tbs. finely chopped red onion
  • 2 Tbs. finely chopped seeded tomato
  • 2 Tbs. chopped fresh cilantro, plus sprigs for garnish
  • Kosher salt
  • 1 1/2 lb. (750 g) shrimp, peeled, deveined and halved crosswise
  • Plantain or tortilla chips for serving

Directions:

In a large bowl, whisk together the Garlic Chipotle Love Sauce, orange juice, lime juice and mango puree. Add the onion, tomato and cilantro and stir well. Set aside.

Bring a large pot of salted water to a simmer over medium-high heat. Fill a large bowl with ice water. Add the shrimp to the simmering water and cook, stirring occasionally, until just cooked through, about 45 seconds. Using a skimmer or a slotted spoon, transfer the shrimp to the bowl of ice water to stop the cooking.

Drain the shrimp well and pat dry with paper towels. Add the shrimp to the Garlic Chipotle Love Sauce mixture and stir well. Cover the bowl with plastic wrap or a lid and refrigerate for 1 hour.

When ready to serve, season the shrimp with salt and lime juice to taste. Garnish with cilantro sprigs and serve with plantain chips. Serves 4.
