In a large pot of generously salted water, cook 1 lb. (500 g) of your favorite dried pasta until al dente, according to the package instructions. Meanwhile, in a large sauté pan over medium heat, warm 1 jar pasta sauce until heated through. Drain the pasta, reserving 1/4 cup (60 ml) of the pasta water. Add the drained pasta to the sauce and stir to evenly coat. Stir in 1 Tbs. to 1/4 cup of the pasta water to achieve your desired consistency, if necessary. Divide among individual bowls, top each with grated Parmesan cheese, chopped fresh herbs and a drizzle of extra-virgin olive oil. Serve immediately. Serves 6.
