Receiving Instructions
- The turkey ships fresh with ice packs to arrive chilled. Refrigerate or freeze the turkey, still in the vacuum-sealed bag, immediately upon receipt; it keeps 7 days refrigerated and up to 3 months frozen. Remove the turkey from the refrigerator 1 hour before roasting and remove it from the bag. Do not leave the turkey at room temperature longer than 1 hour.
- The ham ships frozen with dry ice, which may have evaporated during shipment. This is normal. Please take care not to touch any remaining dry ice with bare hands. Upon receipt refrigerate the ham, or freeze to enjoy at a later date. It will keep, unopened, refrigerated up to 3 weeks or frozen up to 3 months. For best quality, we do not recommend refreezing the ham once thawed.
- Sides ship frozen with dry ice, which may have evaporated during shipment. This is normal. Please take care not to touch any remaining dry ice with bare hands. Upon receipt, store unopened in freezer for up to 12 months. Once opened, store in refrigerator and enjoy within 5 days. Pies will keep unopened in the freezer for up to 1 month; once defrosted, store in the refrigerator for up to 7 days. Once opened, cranberry relish will store in refrigerator for up to 5 days.
Serving Instructions
Turkey
- Defrost thoroughly. To cook, place turkey in a sealed roaster pan or wrapped in foil and cook at a medium temperature (approx. 375°F) for 10-15 minutes per pound (if stuffed add around 30 minutes extra cooking time). Check temperature in the deepest part of the breast. Remove from oven and place on a warm platter, then allow 15 minutes to finish cooking, with tin foil cover still on, before serving.
Ham
- Remove the meat from the freezer and thaw in the refrigerator for 48 to 72 hours. To retain more of the natural juices, leave the meat in its original packaging while thawing. It is normal for natural juices to accumulate. Preheat oven to 325°F. Remove the ham from the packaging and place, fat side up, in a large roasting pan. If using a half-ham, place the flat side directly on the roasting pan. Insert an ovenproof meat thermometer so the tip is centered in the thickest part of the ham, not resting in fat or touching bone. Do not add water to the pan or cover the ham. Transfer to the oven and bake for 1 1/4 to 2 1/4 hours, or until the thermometer registers 140°F. If the surface becomes too dark while cooking, tent the ham loosely with aluminum foil. Remove ham from oven, place on a carving board, loosely cover with foil and allow to rest 15 to 30 minutes before slicing.
Classic Mashed Potatoes
- Cook from frozen. Preheat oven to 350°F. Remove plastic wrap from tray, then cover with foil and place on a sheet pan. Cook for 60-65 minutes or until the internal temperature reaches a minimum of 145°F using a calibrated food thermometer. Allow to rest for 10 minutes before serving.
Green Bean Almondine
- Preheat oven to 375°F. Cover tray with foil and bake on center rack of oven for 60-70 minutes in a conventional oven or until the internal temperature reaches a minimum of 145°F using a calibrated food thermometer. Remove foil from tray and serve.
Sausage Cranberry Stuffing
- Bake from frozen. Preheat oven to 375°F. Remove plastic film, cover tray with foil and place on baking sheet. Bake for 65-70 minutes or until the internal temperature reaches a minimum of 155°F using a calibrated food thermometer. Allow to rest for 10-15 minutes before serving.
Maple Squash Au Gratin
- Cook from frozen. Preheat oven to 350°F. Remove plastic wrap from tray then place on a sheet pan. Cook for 55-60 minutes or until the internal temperature reaches a minimum of 145°F using a calibrated food thermometer. Allow to rest for 10-15 minutes before serving.
Brussels Sprouts in Pancetta Gratin
- Cook from frozen. Preheat oven to 375°F. Remove plastic wrap from tray, cover with foil and place on a sheet pan. Cook for 70-75 minutes or until the internal temperature reaches a minimum of 145°F using a calibrated food thermometer. Allow to rest for 10-15 minutes then stir before serving.
Bacon Mac and Cheese
- Cook from frozen. Preheat oven to 350°F. Remove plastic wrap from tray, cover with foil and place on a sheet pan. Cook for 50-55 minutes, then remove foil and cook for 15-20 more minutes, or until the internal temperature reaches a minimum of 155°F using a calibrated food thermometer. Allow to rest for 10-15 minutes before serving.
Classic Turkey Gravy
- Defrost gravy for 24 hours. Pour into a saucepan and whisk continuously over medium-high heat until gravy comes to a simmer. Serve warm over meat and vegetables.
Cranberry Relish
- To use cold: Defrost for 24-48 hours and serve.
- To use hot: Defrost for 24-48 hours. Pour into saucepan and heat on medium to low. Continuously stir until cranberry relish reaches a minimum internal temperature of 145°F.
Parker House Rolls
- Remove the plastic wrap, cover the tray with parchment paper. Let rise at room temperature (68°F to 72°F) for about 9 hours or overnight. To bake, preheat oven to 375°F and bake the rolls until golden brown, about 18 to 22 minutes depending on oven. Recommendation: Lightly beat 1 egg with 1 tbs. cold water and, using a pastry brush, brush the rolls with the egg wash before putting them in the oven. Serve warm.
Pecan Pie
- If frozen, remove from freezer and place on countertop 4–5 hours. Serve at room temperature or chilled. Refrigerate any leftovers in an airtight container for up to three days.
Pumpkin Pie
- Remove from freezer and store inside the box, unwrapped, overnight. An hour before serving, bring to room temperature. Refrigerate any leftovers in an airtight container. Do not microwave.
Cabernet Braised Short Rib Haute Pocket
- Preheat oven to 350°F. Cook for 15–20 minutes, until internal temperature reaches 158°F.
Bacon Wrapped Beef Tenderloin with Blue Cheese
- Preheat oven to 350°F. Cook for 12 minutes.
- Turkey: 100% Turkey.
- Ham: Pork cured with water, salt, sodium lactate, sugar, dextrose, sodium phosphates, sodium diacetate, sodium erythorbate, sodium nitrite, flavorings.
- Mashed Potatoes: Potatoes, milk 2% (Grade-A reduced-fat milk, vitamin A palmitate, vitamin D3), unsalted butter, heavy whipping cream, contains 2% or less of: granulated garlic, salt.
- Green Bean Almondine: Green beans, almonds, unsalted butter, contains 2% or less of: black pepper, granulated garlic, salt.
