In England, Stilton isn't just a cheese – it's an institution, displayed with pride on sideboards in pubs and restaurants throughout the country. Our aged Stilton from the historic Cropwell Bishop Creamery in Nottinghamshire lives up to its reputation as the king of British cheeses. Aged for three months, the cow's milk cheese has the variety's characteristic blue veining; rich, complex flavors; and a moist, firm, yet crumbly texture. Stilton is traditionally served after dinner with a fine port or Sauterne, fruit and nuts – the perfect ending to a holiday meal.

- Use & Care
- Refrigerate the cheese in the vegetable drawer upon receipt. Unopened, it keeps 1 month refrigerated, 2 weeks when opened. After opening the package, scrape away excess surface mold. (An earthy-looking mold is normal on a well-aged cheese.) Wrap any unused portion in waxed paper or in cheesecloth covered with aluminum foil.
- For optimal flavor, serve the cheese at room temperature. Traditional fare in English pubs and restaurants, Stilton is often paired with port, crusty bread, sweet butter, English biscuits, walnuts or pears. After you've eaten the cheese, the shell remains; pour in wine and dip chunks of bread.
- Pasteurized cow's milk, salt, vegetarian rennet, dairy cultures (milk), mold cultures (penicillium roqueforti).

I tried to buy more in January and it is unavailable. Wish they carried it through the cold winter months as I would a buy a wheel per month. Keeps well, extraordinary flavor and texture. I have tried other Stilton and none compare to this product. Nice blue veins...not the horrible green seen so often in poorly kept or old Stilton. Fortunately it occurred to me to look online before it was too late. For several years we have given these cheeses to whichever households were hosting Christmas family gatherings, and this year we finally got one for ourselves. It is marvelous to the last crumb. Some people cut it into wedges, but we just dug into the middle, and now we are finally eating the thin walls and the bottom. Still delicious.
