Slice and Bake Cheese Coins

A specialty of Sweet Jane's Bakeshop in Northern California, cheese coins are savory wafer cookies made with premium New York Cheddar cheese and a touch of cayenne pepper. Now you can prepare the buttery, lightly spicy treats at home – it's a cinch with these slice-and-bake dough logs, which are rolled in fresh sesame seeds. Served warm from the oven, the crisp coins make a delicious appetizer, cocktail bite or snack.

• Set of three dough logs (approx. 1 lb. each).
• Each log makes 32 cheese coins (approx. 2 3/4" diam. each).
• Shipped chilled.

Receiving Instructions

• Dough ships chilled with gel packs to arrive thawed. This will not hurt the dough. Upon receipt, store in refrigerator for up to 5 days or in freezer for up to 3 months.

Preparation

• Logs are best cut when chilled. If frozen, remove from freezer and thaw overnight in refrigerator.
• Preheat oven to 350°F. Cut log into 1/4" slices. Bake for 12–15 minutes until edges are lightly browned. Check regularly, as oven temperatures vary.

• New York Cheddar cheese (pasteurized milk, cheese culture, salt, enzymes, annatto [color], potato starch, corn starch, powdered cellulose [added to prevent caking]), unbleached flour (wheat flour, niacin, iron, thiamine mononitrate, riboflavin, folic acid), salted butter, sesame seeds, salt, baking powder (sodium acid pyrophosphate, sodium bicarbonate, cornstarch, monocalcium phosphate), cayenne pepper.
