Known in Japan as a gyuto, this light, nimble knife is ideal for slicing meat and fish, and it performs beautifully on vegetables too. The blade is thinner than a traditional chef's knife but still offers plenty of knuckle clearance on the cutting board. - Always use caution when handling sharp objects.
- Avoid cutting on hard surfaces such as stone, metal or glass.
- It is not advisable to use any knife but a meat cleaver to cut through bone, as other blades can be easily damaged.
- Hand-wash with warm water and a mild detergent; rinse and dry immediately.
- Avoid cleaners containing bleach or citrus extracts.
- Sharpen as needed. With regular use and honing once a week, you should not need to sharpen your knife more than once or twice a year.
- Sharpen your knife at home using a whetstone or knife sharpener designed to sharpen at a 16-degree angle, or have it sharpened by a professional.
- Store knife in a safe place to protect its edge and prevent injury.

For an additional charge of $17.50 per address, we can expedite delivery to most destinations. This service is not available for some oversize items, items shipped directly from the supplier (including perishable and custom-manufactured items), out-of-stock items and items to be shipped outside the contiguous 48 states.
Orders received by 9:00 p.m., Eastern time, Monday through Thursday will arrive the next business day; orders placed Friday through Sunday will arrive on the following Tuesday.

If within 30 days, you are dissatisfied for any reason, you may return your purchase for a refund of the merchandise value. An original receipt or gift receipt is required for all returns and exchanges. Returns with a gift receipt will be refunded in the form of a Merchandise Credit for the amount indicated on the gift receipt. Returns with original receipt will be refunded in the original form of payment, cash and check refunds over $100 will be issued as a company check (may take 14 business days from time of request).

They are all good knives, but I find myself using this Asian Chef's knife for most of my prep work. It is a true laser of a slicer and so easy to work with on the board. I like to use a pinch grip and I prefer a true Japanese gyuto blade profile. This knife hits both of those requirements. I wish Shun offered this blade shape in more sizes, but the 7" is really versatile for a home cook (which I am) so I am not complaining. This is my go-to knife for most meal prep tasks. Note: like any quality Japanese knife, you must take care of the blade. Use a good cutting board, hand wash, and sharpen as needed using good quality water stones.Date published: 2016-12-17Rated 5 out of 5 by Mike122 from Respect the knife I have owned a Shun classic chef knife for five or six years. it is hands down the best knife I have ever owned, compared to european knives. The blade is thinner and a bit more brittle than than the others so it is important to use the knife properly. This means having a proper cutting surface, i.e. wood, and not twisting the blade as you are cutting. If you use it properly, you will be rewarded with a tool that cuts, slices, and preps food effortlessly. As far as sharpening goes, once every month or two so I touch up the edge with a medium ceramic rod. roughly once a year I break out the japanese water stones and review the technique on youtube, and it comes out ridiculously sharp. I use a King combo water stone with a nagura. Youtube also has videos of how to make sure your stone is perfectly flat before you start to sharpen your knife. Reading this you might think its too much trouble to go to, but it's really easy.
