Brothers Jordan and Jared Schmidt lend a designer's sensibility to the creation of their knives and – in the process – have redefined the art of modern knife making. Each German stainless-steel blade is hand ground, polished and sharpened to the ideal angle. Double bolsters and the company's signature Curve® promote optimal hand position and leverage. Ergonomic full-tang handles are crafted of richly grained zebrawood. This set includes seven essential knives, six steak knives, a space-saving magnetic storage block and a two-stage sharpener.

Knives

Use

• Always use caution when handling sharp objects.
• Avoid cutting on hard surfaces such as stone, metal and glass.
• It is not advisable to use any knife but a meat cleaver to cut through bone or frozen food, as other blades can be easily damaged.

Care

• Hand-wash knives with warm water and mild detergent. Rinse and dry immediately.
• Use honing rod once per week to maintain ideal blade angles.
• Sharpen knives once or twice per month, ideally with Schmidt Brothers pull-through sharpener.
• Hand-wash knives after sharpening.
• Store knives in safe place to protect edges and prevent injury.

Storage Block

Use

• When positioning block, ensure minimum of 6" clearance above for safe knife removal and replacement.

Care

• Wipe clean with soft, damp cloth.
• Dry thoroughly before replacing knives.
• Do not immerse block in water or other liquid as this may cause damage.

Sharpener

Use

• Insert knife in sharpener with heel of blade in slot. Pull blade through slot in one smooth movement. Repeat 2–3 times.
• Coarse sharpening may require small amount of pressure. Pull blade through fine slot after coarse slot sharpening.

Care

• Wipe clean with soft, damp cloth.
