Master pastry chef Jean-Yves Charon crafts our petite croissants in the traditional French style using butter and ultrathin layers of yeast dough, laboriously folding and cutting the pastry by hand. Shipped frozen, they are easy to prepare—just let rise overnight and then bake in the morning. The croissants emerge from the oven with flaky, golden-brown exteriors, delicate interiors and an irresistible buttery aroma. Ideal for serving a crowd with minimal effort, the croissants bring a little taste of France to your next breakfast or brunch.

- The croissants ship frozen with dry ice. Please take care not to touch the dry ice with bare hands. Upon receipt, remove croissants from the shipping container and place in the freezer, where they will keep for up to one month.
- Place the frozen croissants, rounded side up, on a nonstick or parchment-lined baking sheet. Cover loosely with a sheet of parchment paper. Let rise at room temperature (68° to 72°F) for about 9 hours or overnight. Each croissant should measure about 2 3/4" wide and 1 3/4" high. Preheat an oven to 375°F. Remove the top parchment paper. If desired, lightly beat 1 egg with 1 tsp. cold water and, using a pastry brush, brush the croissants with the egg wash. Bake the croissants until golden brown, 15 to 20 minutes.
- Enriched flour (wheat flour, niacin, iron, thiamine mononitrate, riboflavin, folic acid, enzyme, ascorbic acid [dough conditioner]), butter, water, sugar, yeast, salt, dough conditioner (wheat flour, malted barley flour, ascorbic acid [dough conditioner], enzymes).

I have bought these for years and have never been disappointed. Those days just might be gone. Everyone commented that they tasted flat and just full of air, not rich and buttery. I would have returned them if I could have. They were delayed in the delivery due to weather. The dry ice was almost all gone when I got them but I didn’t notice any problem when I opened the box. They were still frozen. (The 2017 were almost comparable to the French Bakery, but definitely much better than the store croissants.) Store croissants might be better than these minis. Just fair. They do not have the flaky texture or as buttery a taste as last year's full sized croissants. Disappointing. Would not order again. My family absolutely LOVES the full size version of these croissants. I had company, so I wanted to be able to feed everyone quickly and not use the overnight rising ones. So, I ordered both these and the chocolate mini versions. These plain ones were just gross. They were bubbling on the cookie sheet (I did an egg wash on the first batch), and I even left them in a few extra minutes. They were limp and wet. I then cooked another batch with no egg wash and a little lower temp. I even flipped them half way through, but we had the same outcome - wet and limp...and gross. They all went in the trash. They must have been changed the recipe I have ordered these several times before, they were used to be so rich and buttery, almost "too much butter" because when I baked them, the baking pan was filled extra butter! But this time, they were so dry. There was absolutely no rich buttery flavor there, just dry, crunchy ( I should say "flaky"?) Bit of an issue with WS in that shipment dates changed several times between when item added to cart to confirmation of order to a couple of order updates.
