- More about Mauviel
In 1830, Ernest Mauviel established his namesake cookware company in Villedieu-les-Poêles in Normandy. The village had a long history of outstanding metalwork; the locals were considered experts in the craft. Today, much of the manufacturing is still done by hand using traditional processes passed down through generations of copper makers. True to France’s rich culinary history, Mauviel 1830 is a favorite in professional kitchens, where copper’s quick, even heat conductivity is essential for making delicate sauces and other French classics. Mauviel now also offers stainless-steel collections crafted with the same attention to detail as its traditional copper cookware.
Rated 5 out of 5 by Boston_home_cook from Excellent product! This product is super small, but super useful. It's just about the right size for cracked peppercorn to go with a steak or two. It's also great for melting down butter. It's copper, so it does need extra care. Otherwise it will end up looking like an old penny.Date published: 2018-08-04Rated 5 out of 5 by upscalebohemian from More Useful than You Might Think I never thought I'd need a dedicated butter warmer even though I had a nearly full set of Mauviel copper, but then the Baking Steel came out and my pizza crusts improved so dramatically I started making them more. The recipe for Wolfgang Puck's Spago Margherita calls for olive oil infused with garlic until the garlic's lightly browned (about 20 minutes, then off the heat add red pepper flakes and allow to cool before brushing on top of pizza and adding toppings). This is the perfect-size pan for that (and melting butter) because the garlic stays more submerged. It's also GORGEOUS -- much more so than you'd guess from the picture. Highly recommend.Date published: 2013-11-07
