Kurobuta, or "black hog," is the Japanese term for the Berkshire breed, the source of the famous Japanese kurobuta pork lauded for its deep color and fine marbling. This whole ham is prepared bone-in, retaining even more of the sweet and juicy flavor for which Kurobota hams are renown. Its rich savor is further enhanced by expert curing, using an old family recipe and light smoking over hardwood chips.
- Choose from 6 to 8 lb. half-ham (serves 10 to 14); 8 to 10 lb. half-ham (serves 14 to 18); or 12 to 15 lb. whole bone-in ham (serves 18 to 22).

- Use & Care
- The ham was shipped frozen with dry ice, which may have evaporated during shipment. This is normal. Please take care not to touch any remaining dry ice with bare hands. Upon receipt refrigerate the ham, or freeze to enjoy at a later date. It will keep, unopened, refrigerated up to 3 weeks or frozen up to 3 months. For best quality, we do not recommend refreezing the ham once thawed.
Proper Thawing Technique
- Remove the meat from the freezer and thaw in the refrigerator for 48 to 72 hours (for 6 to 8 lb. and 8 to 10 lb.) or 72 to 96 hours (for 12 to 15 lb.). To retain more of the natural juices, leave the meat in its original packaging while thawing. It is normal for natural juices to accumulate.
- Preheat oven to 325°F. Remove the ham from the packaging and place, fat side up, in a large roasting pan. If using a half-ham, place the flat side directly on the roasting pan. Insert an ovenproof meat thermometer so the tip is centered in the thickest part of the ham, not resting in fat or touching bone. Do not add water to the pan or cover the ham. Transfer to the oven and bake for 1 1/4 to 2 1/4 hours (6 to 8 lb.), 1 1/2 to 2 1/2 (8 to 10 lb.) or 3 1/2 to 4 hours (12 to 15 lb.), or until the thermometer registers 140°F. If the surface becomes too dark while cooking, tent the ham loosely with aluminum foil. Remove ham from oven, place on a carving board, loosely cover with foil and allow to rest 15 to 30 minutes before slicing.
- Pork cured with water, salt, sodium lactate, sugar, dextrose, sodium phosphates, sodium diacetate, sodium erythorbate, sodium nitrite, flavorings.

Orders received by 9:00 p.m. ET Monday through Thursday will arrive the next business day; orders placed Friday through Sunday will arrive on the following Tuesday.

Returns with a gift receipt will be refunded in the form of a Merchandise Credit for the amount indicated on the gift receipt. Returns with original receipt will be refunded in the original form of payment, cash and check refunds over $100 will be issued as a company check (may take 14 business days from time of request).

It is shipped frozen, I followed the directions, let it defrost in the refrigerator for 3 days, warmed it in the oven and it was perfect. I kept it frozen in its plastic packaging until 3 days before our party. (Friday afternoon) I removed it from the packaging and let it defrost in the refrigerator for two days. (Friday/ Saturday) On Sunday I took it out of the refrigerator and brought it to room temperature for about an hour. I then cooked it at 350 degrees for about 1 1/2 hrs to 2 hours. It cooked in its own juices and flavorings right from the packaging. I added nothing to it. IT WAS DELICIOUS!! Juicy & flavorful! My husbands family requested it again for this Christmas. Going back to other reviews it is clear that size/portions and weight received have been an issue for other reviewers - one customer says the full ham they ordered served about 10 people. This was my first time ordering a Kurobuta ham from William-Sonoma. It was by far the best ham we have ever served...hands down. The flavor was amazing, meat tender and juicy.
