Preparation Instructions

• 2 to 3 lb. (1 to 1.5 kg) boneless, skinless chicken breasts, cut into 1-inch (2.5-cm) strips, halved if long
• Kosher salt and freshly ground pepper
• 2 Tbs. vegetable oil
• 1/4 cup (60 ml) water
• 1 jar Tuscan chicken starter
• 1/4 cup (60 ml) heavy cream
• Large handful of chopped spinach (optional)
• 1/4 cup (30 g) grated Parmesan cheese (optional)
• Cooked pasta, mashed potatoes, or vegetables for serving (optional)
• 1 bunch fresh basil leaves, julienned (optional)

Season chicken with salt and pepper. In Instant Pot set to Sauté, warm oil. In 2 batches, sear chicken until browned all over, about 8 minutes per batch. Transfer to plate. Add water and cook, scraping up browned bits from bottom of pot. Press Cancel.

Return chicken to pot and add Tuscan chicken starter. Lock lid in place, seal and set to cook at high pressure for 5 minutes. When pressure cooking is complete, quick-release the steam. Carefully remove lid and, using slotted spoon, transfer chicken to a bowl. Press Cancel.

Set Instant Pot to Sauté and stir in cream, spinach and cheese. Simmer, stirring, until sauce is thickened, 2 to 5 minutes. Add chicken and stir to coat.

Serve over pasta, mashed potatoes or vegetables and garnish with basil.
