Instant Pot General Tso's Chicken Starter

Skip the takeout and use the Instant Pot to whip up a restaurant-worthy version of General Tso's Chicken. Our Test Kitchen has taken fans' all-time favorite recipes for the legendary dish and turned them into a time-saving starter designed especially for the Instant Pot. The savory-sweet blend combines umami-packed hoisin sauce and pure brown sugar with garlic, ginger and sesame – plus red chiles for a touch of spicy heat.

General Tso's Chicken Recipe

4 lb. (2 kg) boneless, skinless chicken thighs or breasts 

Kosher Salt and freshly ground pepper

2 Tbs. vegetable oil

Pat the chicken dry and season with salt and pepper. In an Instant Pot set to Saute, warm the oil. In batches, sear the chicken, turning occasionally, until browned all over, about 8 minutes per batch. Remove all the chicken from the pot and add 2 Tbs. water to the pot. Using a wooden spoon, deglaze the pot, using a wooden spoon to scrape up any browned bits. Return all the chicken to the pot. Add the starter but DO NOT STIR. Lock the lid in place, seal and set to slow cook at high heat for 1.5 hours. When slow cooking is complete, quick release the remaining steam. Carefully remove the lid and serve.
