Rated 2 out of 5 by Bullwinkle from Disappointing I bought the 8-1/2" skillet about a month ago and loved it. I used it most every morning to make egg omelettes. Never once did I have an issue with sticking. I simply melted some butter in the pan, poured out the excess and then cooked the omelettes on medium heat with great success. They never stuck once. I never had to use the Hestan cleaner to restore the finish. It was perfect. I was so pleased with the results that I returned the original pan in exchange for the 10-piece set a couple of days ago. I am sorry to report that the pan that came with the set has been the polar opposite of the original pan. In the last 2 days, I have prepared 4 omelettes using the exact some techniques as with the original pan. Everything has stuck like mad. Omelettes now look like some science experiment gone back. It's hard to believe it is the same brand as my original pan. I have had to use the cleaner each time to restore the finish. Extremely frustrating. Not to be deterred, I cooked pasta in the 8 qt. stockpot the other night. While the pasta turned out fine, the finish in the bottom of the pot was speckled with what looked like small rust spots. Again, after a little elbow grease with the Hestan cleaner, the finish was restored. So far, this has been an underwhelming experience. I believe we have 30 days to return so will continue to experiment. It performs to perfection. I have no problem with food sticking in the fry pans because I follow the rule to add oil, preheat the pan, cook then let food self-release. I was very concerned about reports of the pans being difficult to keep looking good. By a mile, these pans are the easiest I have ever had (had All Clad copper core previously). And I am someone who obsesses about keeping beautiful pots looking beautiful. (I know, get a life!) But all it take is some Barkeeper's Friend and always hand-washing. Easy as can be.Date published: 2018-01-23Rated 5 out of 5 by KMitchen from Innovative and Impressive - Hestan Raises the Bar I went to my local W&S after doing hours of online research expecting to purchase with the All Clad TK or Copper Core sets. But when I arrived, I noticed this new, shiny, sexy looking stuff called “Hestan Nanobond”. I had not done any previous research, but the feel and finish impressed me. My impulse decision was a great one — this cookware heats very evenly, cleans incredibly well, and is basically non-stick, yet you can still brown and get a great sear. Cleaning is a breeze. These pans are infused with some sort of magic, because that’s the only explanation. Nothing sticks to them. I have burned stuff onto the pan...stuff that normally would require a lot of elbow grease to clean in a standard stainless skillet, and it just wicks right off. Yes, you will find some blue-green streaks in the pans after washing, but cleans off easily with bartenders friend. I don’t obsess over this—-pans are for cooking, not looking! These will last a lifetime, and are wonderful. The Dutch Oven in our 1st set was flawed & we had to return the entire set in order to get a replacement. The 2nd set was flawless & we are extremely pleased with our Hestan NanoBond Cookware. We were replacing 25 year old All Clad Stainless Cookware and noticed the new All Clad cookware is heavier than the original Triple Ply we owned. The Triple Ply's weight was becoming an issue for me when using the larger pans & the new heavier pans would have been very difficult for me to use. I noticed several Hestan NanoBond reviews noted the pans' weight & when I compared the weights of All Clad & Hestan, there was over a pound's difference on a number of them. These pans are really beautiful. They are as beautiful in their way as classic copper pans are in theirs. They manage to be relatively light in weight but still feel solid and perform superbly. While NanoBond is not sold as a nonstick surface, I've had no issues with things like scrambled eggs sticking. The directions advise heating the pan on medium or lower heat and then adding butter or oil, allowing that to heat and then adding whatever is being cooked to the pan. This works very well and clean up is very easy - usually a little dish soap & dishcloth is all it takes. They are much easier to keep sparkling clean than my All Clad was and I no longer need additional nonstick skillets as I did before. We have had some of the blue spots other reviews mention & they are easily removed with either the cleaner that is a gift with purchase or Bar Keepers Friend. They can go in the dishwasher but the cleanup is so quick & easy I usually just hand wash them. Scratching hasn't been a problem, either. I really enjoy cooking with my new pans & have been pleased with the results every time. They were very expensive & we wouldn't have purchased them without the 30-day return policy as insurance but I am so glad we did. As with so many things, there have been significant improvements in cookware over the past 25 years & these pans are a huge upgrade in that they are significantly lighter, much easier to clean & make it easier to consistently produce delicious home cooked meals. I've used all but the 11.5 skillet. Love to cook with them. I saw other reviews and even spoke with sales representative, but feel more at ease not using metal utensils. Instead purchased metal with nylon coating; very sturdy and won't scratch. I used butter, olive oil and Pam Olive oil and had no issues with making omelettes or sunny side up eggs in skillet. Very easy to clean. I have gas cooktop and do not need to used a very high setting to get desired temperature. Heat distribution is even and quick; no hot spots. I have seen some minor discolorations, small bluing marks (noted in documentation) and water spots after cleaning. However, using concentrated lemon juice removes some of these noted finds, but the cleaning paste that comes with the set, restores it to new again. (No, I have not received discount or free samples for this review, wish I knew how to get those LOL) They are absolutely beautiful!!! But that is not the real reason I bought them, I bought them because they don't smell. I grew up with good quality stainless steel cookware that my mom bought a long time ago. Now that I had to buy my own set I have looked high and low in every store I know. The big annoyance I found when in search for my cookware was that all other normal stainless steel cookware smelled metallic to me. The smell is like the smell of old coins or keys, so I just couldn't trust them. I don't know if the cookware manufacturers out there have change the quality of stainless steel or what but what I know is that my mom's cooking sets don't smell like the ones I see at the stores now. And yes, for those of you that may be wondering, I did look like a weirdo at every store I went smelling and rubbing on the cookware and then smelling it again. So you can guess my excitement when I smelled these and couldn't smell anything. I can smell it on the lid tho but I am ok with that because I can't smell nothing on the actual cookware surface. I trust the cooking surface in this set! It says on the description that you can use metal utensils on it but I am loving my set so much (and since I paid full price for my set) I am not willing to try. I hate plastic and still don't trust silicon very much so I bought a nice set of bamboo/wood utensils and so far so good. They are super easy to clean! Most of it comes off with just the spray feature of my kitchen sink faucet and the rest with my soft sponge. Recommended improvement would be the handle. I love my set but I did forget some water boiling on the closed pot for a little too long and the handle felt a little warm, not close to being hot or anything to cause discomfort but just a little warm which I think could be avoided if they switched to a more "Y" shaped handle.
